Quinoa Salad

Protein-Rich, Gluten Free, Vegetarian, PCOS/D Friendly

Ingredients:

  • 1 cup quinoa
  • broccoli
  • onion and carrots or other vegetables of your choice
  • 1 whole cucumber
  • ½ cup pomegranate
  • 1tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • salt and black pepper to taste
  • red chilli powder
  • lemon

Method:

  • Boil quinoa and strain.
  • Steam carrots and brocolli or any veggies of your choice and sautee them
  • Add salt, black pepper, and a pinch red chilli powder in it
  • Mix in quinoa
  • Add cucumber in it afterwards.
  • Add little salt and black pepper again and add lemon according to your taste afterwards. Mix it altogether.
  • Top it with some anar seeds, dry roasted pumpkin and sunflower seeds. Give a mix again.
