Quinoa Salad
Protein-Rich, Gluten Free, Vegetarian, PCOS/D Friendly
Ingredients:
- 1 cup quinoa
- broccoli
- onion and carrots or other vegetables of your choice
- 1 whole cucumber
- ½ cup pomegranate
- 1tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- salt and black pepper to taste
- red chilli powder
- lemon
Method:
- Boil quinoa and strain.
- Steam carrots and brocolli or any veggies of your choice and sautee them
- Add salt, black pepper, and a pinch red chilli powder in it
- Mix in quinoa
- Add cucumber in it afterwards.
- Add little salt and black pepper again and add lemon according to your taste afterwards. Mix it altogether.
- Top it with some anar seeds, dry roasted pumpkin and sunflower seeds. Give a mix again.
